Grilled Octopus With Rouille Sauce
- 1 tentacles kilo cooked octopus
- salt
- olive oil
- parsley
- black pepper
- 2 large egg yolks
- 5 cloves garlic chopped
- 2 tablespoons red pepper chopped
- 1/2 lemon
- 1 tablespoon paprika
- 1 teaspoon dijon mustard
- 1 teaspoon tomato puree
- 1 pinch chili powder
- 1 7/8 cups olive oil
- salt
- In a food blender, add the egg yolks, garlic, red pepper, lemon juice, mustard, tomato puree, paprika, and chili powder and mix.
- Add a tablespoon of oil with the blender on.
- When the oil is thoroughly mixed in, gradually add the remaining oil, a little at a time. Season to taste.
- Place a little oil on a griddle and heat up.
- When sufficiently hot, place the octopus on the griddle and cook on medium heat for 4 minutes on each side.
- Season and drizzle with oil.
- Sprinkle the parsley over the octopus.
- Serve with salad and boiled new potatoes in their skins.
