Apricot Tea Loaf
- 1 c. dried apricots
- 1 1/2 c. warm water
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. baking soda
- 1 c. sugar
- 2 Tbsp. melted margarine
- 1 large egg
- 1/4 c. water
- 1/2 c. orange juice
- 1/2 c. coarsely chopped walnuts
- Cover apricots with warm water for 30 minutes.
- Drain and cut into small pieces.
- Sift together next four ingredients and set aside.
- Mix next five ingredients together well.
- Add sifted ingredients to sugar mixture with apricot pieces and walnuts.
- Mix until flour is just dampened.
- Pour into greased and floured pan (8 1/4 x 4 1/2 x 2 1/2-inch loaf pan).
- Bake at 350u0b0 for 55 to 60 minutes until lightly browned.
- Turn out on wire rack.
