Harissa Turkey
- 1/3 cup all purpose flour
- 1 tablespoon black sesame seeds
- 2 large egg whites
- 2 tablespoons milk
- 1 pound turkey breasts, cut into 1/2 inch strips
- 2 tablespoons harissa paste
- vegetable oil to deep fry
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- 1 scallion thinly sliced
- lime wedges to serve
- Combine flour and sesame seeds on a large plate. Whisk egg whites and milk in a medium bowl. Brush turkey with 2 tbsp harissa paste. Dip into egg white mixture; let excess drain off. Coat in flour mixture. Place on a plate. Cover with plastic wrap. Chill 15 minutes.
- In a large heavy-based saucepan, heat oil over moderately high heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry turkey, in batches, 3-4 minutes or until golden brown and cooked. Using a slotted spoon, transfer to paper towels to drain. Place on a serving plate.
- Whisk mayonnaise, 3 tsp harissa and lime juice in a small bowl. Season to taste. Sprinkle turkey with scallion. Serve with mayonnaise mixture and lime wedges.
