Thai Style Cutlets
- 2 1/4 pounds mackeral Spanish, or any white fleshed fish
- 2 large potatoes boiled
- 6 kaffir lime leaves snipped into thin strips with scissors
- 3 tablespoons cream powder coconut, or coconut milk
- 2 tablespoons fish sauce
- 1/2 teaspoon shrimp paste
- 1 tablespoon chili powder or more
- 1/2 teaspoon ground cumin
- 1 tablespoon ground coriander
- 1/2 teaspoon brown sugar
- 3 green onions chopped
- 1 galangal thumb-size piece, OR ginger, pounded
- 3 cloves garlic chopped
- 1 red chili chopped
- 1 handful coriander leaves chopped
- 2 tablespoons corn flour
- oil for high temp. frying
- 1 handful fresh coriander
- Mashed the boiled potato.
- Microwave the fish flesh until soft.
- In a bowl, mix in all the ingredients.
- Make into round patties and deep fry in semi hot oil until golden brown.
- Fry three patties at a time.
- Dish out in a kitchen paper towel to drain excess oil.
- Serve with chilli sauce,lime wedges and fresh coriander.
