Oats And Walnut Biscuits
- 1 cup butter at room temperature
- 2 tablespoons peanut butter
- 1 cup brown sugar
- 2 eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon fine salt
- 1 cup chopped walnuts
- 2 cups rolled oats
- Preheat oven to 180 degrees Celsius.
- Whisk the butters with an electric mixer until obtaining a creamy mixture.
- Add the sugar and eggs, and whisk a little more.
- In a bowl, combine flour, baking soda, salt, chopped nuts, and oats. Mix well with your fingertips.
- Gradually, add the cream mixture, and mix well to form a moldable pulp that is not too heavy. Too much flour will make the biscuits hard instead of light and crispy.
- With floured hands make balls, and place them on a baking tray lined with parchment paper or silicone mat.
- Bake for about 15 minutes.
