Curried Shrimp(Serves 8)

  1. Melt 1/4 cup butter in 3-quart saucepan; stir in curry powder. Add celery, green pepper and parsley.
  2. Saute 2 or 3 minutes. Stir in flour and salt.
  3. Remove from heat; gradually stir in milk.
  4. Cook over medium heat, stirring until thick.
  5. Cook 2 additional minutes.
  6. Remove from heat and stir in cheese until melted.
  7. Add shrimp and pimento.
  8. Heat to serving temperature; do not boil.
