Curried Shrimp(Serves 8)
- 1/4 c. butter
- 1 Tbsp. curry powder
- 1/2 c. sliced celery
- 1/2 c. chopped green pepper
- 1/4 c. chopped parsley
- 5 Tbsp. all-purpose flour
- 1 tsp. salt
- 3 c. milk
- 1 1/2 c. (6 oz.) shredded Cheddar cheese
- 2 lb. shrimp
- 1/4 c. chopped pimento
- 2 Tbsp. butter
- 1 can chow mein noodles
- 1 (4 oz.) pkg. coconut
- 1/2 c. peanuts
- hot cooked rice
- Melt 1/4 cup butter in 3-quart saucepan; stir in curry powder. Add celery, green pepper and parsley.
- Saute 2 or 3 minutes. Stir in flour and salt.
- Remove from heat; gradually stir in milk.
- Cook over medium heat, stirring until thick.
- Cook 2 additional minutes.
- Remove from heat and stir in cheese until melted.
- Add shrimp and pimento.
- Heat to serving temperature; do not boil.
