Ricotta And Strawberry Cheesecake

  1. Preheat oven to 350u0b0F. Lightly grease an 7 inch springform pan and line with baking paper.
  2. Combine raisins and orange juice in a small bowl. Set aside for 5 mins.
  3. In another bowl, combine ricotta, sour cream, flour, egg yolk and orange zest. Stir in raisins and juice.
  4. In a small, clean bowl, beat egg whites until soft peaks form. Fold in honey. Gently fold egg white mixture into ricotta mixture. Pour into the pan and smooth top.
  5. Bake for 30-35 mins, until just set. Cool in turned-off oven for 30 mins. Chill until ready to serve.
  6. Decorate with strawberries and sprinkle with powdered sugar.
