Smothered Cabbage

  1. Coat the bottom of a heavy pot with oil.
  2. Add onions and cook at medium-low heat, stirring occasionally, until onions begin to caramelize.
  3. Add tasso, pickled pork, garlic and Creole seasoning.
  4. Saute for a minute.
  5. Add cabbage and stir briefly.
  6. Add salt, pepper, pepper flakes and 3 cups of water.
  7. Bring water to a simmer, cover the pan and cook over low heat for 45 minutes, or until the cabbage is tender.
  8. Uncover and stir in butter before serving.
  9. Six to eight servings
