Glacé Fruit Cakes
- 1/2 cup butter softened
- 1 cup granulated sugar
- 2 eggs
- 1/2 cup all purpose flour
- 3/4 cup self rising flour
- 1/3 cup ground almonds
- 1/2 cup 2% milk
- 1 green apple cored, grated
- 5 1/4 ounces pineapple glace, finely chopped
- 5 1/4 ounces apricots glace, finely chopped
- 12 cherries fresh, stems intact
- 3 ounces white chocolate melted, cooled slightly
- powdered sugar to serve
- vanilla ice cream to serve
- Preheat oven to 350u0b0F. Grease and line 6 - 8.5 oz ramekins with parchment paper.
- Cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Add flour, almond, milk, apple, pineapple and apricot and mix until just combined. Distribute between ramekins, smooth surface and bake for 30-35 mins, until a skewer inserted in the center comes out clean. Let cool for 10 mins.
- Meanwhile, dip each cherry into chocolate and place on a plate lined with parchment paper. Chill for 15 mins to set.
- Trim tops from pudding. Run a knife around rim of ramekins then turn cakes out onto serving plates. Dust with powdered sugar. Top with cherries and serve with ice cream.
