Lemon Baked Chicken For 100(1 Piece Each)
- 45 lb. chicken (8 piece cut)
- 1/3 c. paprika
- 2 tsp. pepper
- 1/2 c. salt
- 3 lb. all-purpose flour
- 2 c. lemon juice
- 3 c. honey
- 5 c. vegetable oil
- 1 1/2 lb. margarine, melted
- Wash chicken under running water.
- Drain.
- Combine paprika, pepper and salt.
- Sprinkle over chicken.
- Let stand 1/2 hour. Dredge chicken in flour.
- Combine lemon juice, honey and oil.
- Set aside.
- Grease baking sheet pan(s) with melted margarine.
- Place chicken on pan skin side down.
- Cover with foil.
- Bake 30 minutes at 400u0b0.
- Turn chicken over and pour lemon juice mixture over it. Do not cover.
- Return to oven and bake additional 20 to 30 minutes until tender.
- To serve 50, use half recipe.
- Cooking time is the same.
