Butter And Cinnamon Christmas Cookies

  1. Preheat oven to 180 degrees Celsius.
  2. Beat the butter with the sugar.
  3. Add the egg and cinnamon while constantly beating.
  4. Sift the flour with the baking powder, and add to the butter and egg mixture.
  5. Cover entirely with plastic wrap, and refrigerate for 30 minutes.
  6. Stretch the dough between two sheets of waxed paper with a rolling pin.
  7. Use different shaped cookie cutters to cut the dough into desired shapes.
  8. Sprinkle the cookie dough with a mixture of sugar and cinnamon.
  9. Bake for 15 to 20 minutes, on a silicon mat, or baking tray lined with parchment paper.
  10. Prepare the icing by beating the egg white with icing sugar and lemon juice.
  11. Once cooled, ice and decorate the cookies as desired.
