Baked Gnocchi
- 17 ounces potato gnocchi package of
- 1/2 cup chicken broth
- 1/8 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon nutmeg
- 6 ounces baby spinach
- 1/8 cup goat cheese about 1.5 oz
- 1/4 cup grated Parmesan cheese
- Preheat oven to 400 degrees
- Place uncooked gnocchi in a greased 8x8 baking dish. Set aside.
- In a medium saucepan, whisk together the cream, chicken broth, and flour over nedium heat. Continue whisking until the cream is simmering and thickened, nbout 5 minutes.
- Add the salt, pepper, and nutmeg and stir to combine.
- Add the spinach and toss to coat in the cream.
- Pour the cream and spinach mixture over the gnocchi and npread the spinach out to cover evenly.
- Crumble goat cheese over spinach then sprinkle with parmesan.
- Bake until top is golden in places, about 30 minutes.
