Moist Banana Bread With Nutella
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 2/3 cups flour
- 1/4 cup shredded coconut
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup bananas Mashed Ripened, I use about 2 1/2 to 3
- 1/2 cup sour cream can sub plain yogurt
- 3 tablespoons Nutella
- 1/2 cup chopped hazelnuts
- Preheat oven to 350 degrees.
- In large bowl or stand mixer, cream butter, sugar, and vanilla extract together.
- Add eggs, one at a time and beat well until fluffy.
- In a separate bowl, sift dry ingredients. Then in another bowl, make the banana, sour cream and Nutella mixture by mashing them all together.
- Add the flour mixture alternately with the banana mixture to the butter mixture, small amounts at a time, ending with the dry ingredients.
- Gently mix in nuts, if desired.
- Grease and flour one bread pan and pour batter in.
- Bake for 45 min - 1 hour, or until a skewer or knife comes out clean. Cool on wire rack in pan for 15 mins, then remove to wire rack. Serve warm!
