Quick And Light Marinara Sauce
- 1 medium onion, chopped fine
- 2 large cloves garlic, pressed through a garlic press
- 1 Tbsp. oil
- 1 (28 oz.) can Italian plum tomatoes with liquid
- 2 to 3 sprigs parsley, preferably broad leaf Italian parsley
- 6 leaves fleshy oregano, cut into small pieces or 1 tsp. dry oregano
- 1 doz. leaves fresh basil (whole)
- 1 1/2 to 2 tsp. brown sugar
- 1/2 tsp. salt or to taste (optional)
- Saute onion and garlic in oil until onions are limp and transparent.
- Using food processor or blender, puree tomatoes with liquid and add to onions.
- Add herbs and sugar.
- Cover and simmer for approximately 20 minutes or until sauce is cooked down to 2/3 of its original volume.
- Remove parsley sprigs.
- Leave other herbs in the sauce.
