Sweet And Sour Corn Salad
- 2 cups sweet corn
- 1 cup bell pepper finely chopped
- 1 cup carrots finely chopped
- 1/2 cup onions finely chopped
- 2 green chillies medium sized, finely chopped
- 3 large garlic cloves thinly sliced
- coriander a handful of green, for garnishing
- 2 tablespoons tomato ketchup
- 2 teaspoons chilli sauce
- 1/2 teaspoon lime juice or vinegar
- 1 tablespoon butter flavored, I used Amul's garlic and herbs butter
- In a small pan heat the butter slightly until it melts, add onions and fry till they get slightly translucent.
- Now add carrots, green chillies and the garlic, fry till you feel the carrots are nicely cooked.
- If you are using frozen corn let the corn steam for a little while and then add them to the above mixture along with the sauces and the vinegar.
- Lastly just before taking the pan off the heat add the bell pepper and let the pepper remain crunchy and not cook much. Garnish with green coriander before serving.
