Endive Gratin With Apples, Speck And Parmesan
- 8 endives
- 3 tablespoons olive oil
- 1/2 lemon juice
- 1 3/8 tablespoons butter
- 8 slices speck
- 2 apples Reinette
- salt
- ground black pepper
- 6 3/4 fluidounces heavy cream 20 cl
- 1 cup grated Parmesan
- Remove the outer leaves of the endives. Rinse and dry them. Cut the endives in 2, lengthwise. Remove the core to remove any bitterness.
- Heat the olive oil in a frying pan and add the endives and the lemon juice. Make them melt over low heat for 20 minutes. Drain thoroughly.
- Preheat oven to 180 degrees Celsius.
- Spread with butter the gratin dish.
- Cut the slices of speck 2.
- Wash the apples and dry them. Remove the core and slice them.
- Interleave the endives, the speck, and the apples slices in the dish. Season with salt and pepper.
- Pour the cream, sprinkle with parmesan, and give a turn of the pepper mill.
- Bake 20 minutes and put under the grill for 5 minutes.
