Minestrone(A Meal In A Pot)

  1. In a large pot, saute carrots, celery, onions, garlic and cabbage in butter until brown (about 20 minutes).
  2. Add tomatoes with fluid and next nine ingredients.
  3. Bring to a boil and simmer for 30 minutes or until rice and vegetables are tender.
  4. Add beans and spinach (cook before adding) and bring entire soup to a simmer.
  5. Add water if needed.
  6. Serve with Parmesan cheese.
  7. Makes about 18 cups (4 1/2 quarts).
