Minestrone(A Meal In A Pot)
- 6 Tbsp. butter or margarine
- 3 large carrots, sliced
- 2 to 3 celery stalks, sliced
- 2 large onions, diced
- 1 garlic clove, minced
- 1 head cabbage (1 1/2 lb.), coarsely sliced
- 1 (16 oz.) can tomatoes
- 8 c. water
- 1/3 c. uncooked rice or orzo
- 2 tsp. salt or less
- 2 tsp. Worcestershire sauce
- 1/4 tsp. oregano leaves
- 1/4 tsp. pepper
- 4 medium potatoes, peeled and diced
- 4 to 6 beef bouillon cubes
- 2 large zucchini, bite-sized pieces
- 2 (15 1/4 to 20 oz.) cans red kidney beans, drained
- 1 (10 oz.) pkg. frozen chopped spinach
- 1/2 c. Parmesan cheese, grated
- In a large pot, saute carrots, celery, onions, garlic and cabbage in butter until brown (about 20 minutes).
- Add tomatoes with fluid and next nine ingredients.
- Bring to a boil and simmer for 30 minutes or until rice and vegetables are tender.
- Add beans and spinach (cook before adding) and bring entire soup to a simmer.
- Add water if needed.
- Serve with Parmesan cheese.
- Makes about 18 cups (4 1/2 quarts).
