Quinoa With Scallops And Prawns

  1. Heat the vegetable-shrimp broth and bring to a boil, then add quinoa.
  2. Season broth with a pinch of salt, if needed.
  3. Cover and simmer over medium-low heat until the broth is absorbed, for about 15 minutes.
  4. Season prawns and scallops with salt and pepper to taste.
  5. In a frying pan, heat olive oil over high heat and saute the prawns and scallops.
  6. Set aside.
  7. Cut the leek into thin strips and saute over high heat.
  8. Set leek aside.
  9. Halve cherry tomatoes.
  10. Saute cherry tomatoes and a few sage leaves.
  11. To serve, arrange quinoa on plates with the prawns, scallops, leeks and tomatoes with sage.
