Funfetti White Chocolate Blondies

  1. Preheat oven to 180C and grease and line an 18cm x 28cm pan with non-stick baking paper, leaving a 2cm over-hang for easy removal.
  2. Place butter, chocolate and milk in medium pan. Cook, stirring until smooth and melted, remove from heat, then set aside to cool for 10 minutes.
  3. With pan off heat stir in sugar, egg and both flours until well-mixed. Add sprinkles and stir until just combined - do not over-mix.
  4. Scrape half the mix into pan, scatter with extra white choc chunks, then top with remaining batter and flatten using offset spatula. Sprinkle with extra sprinkles.
  5. Bake for 23-ish minutes - you want them set but a bit moist. Remove from oven to cool completely in pan. When cold cut into squares.
