Peanut Butter Cookies; Sugar And Gluten Free!
- 1 cup unsweetened smooth PB
- 1/4 cup (1/2 stick) organic butter
- 3 packets Splenda
- 3 packets stevia (or 3 scoops pure stevia)
- 2 Tbsp half&half
- 2 Tsp vanilla
- 1/2 cup brown rice flour plus 1 Tbsp
- 1/2 cup almond flour plus 1 Tbsp
- 1 1/2 Tsp baking powder
- 1/2 Tsp baking soda
- 1/2 Tsp salt
- Preheat your oven to 370 degrees (F) then beat the first six ingredients together until smooth and creamy in a large bowl.
- Whisk the last remaining ingredients together until well blended then mix it into the wet ingredients just until blended.
- Form into 1 inch balls and flatten onto desired cookie shape (you need to form gluten free cookies into the shape you want them to be before baking)
- Bake in a 3:70 oven on a cookie sheet lined with foil until slightly brown and crispy on the edge's.
- Eat until you can eat no more! :D
