Blueberry Swirl Coconut Popsicles (Dairyfree)

  1. Combine blueberries, granulated sugar and lemon juice in a blender and puree until smooth. Taste for sweetness and add more sugar if you like. Transfer mixture in a measuring jug and set aside
  2. In a bowl, whisk together the soy cream, the coconut milk, powedered sugar and pina colada mix.
  3. Fill the popsicles moulds, alternating layers of coconut cream and blueberry puree
  4. Freeze 1h then insert the sticks. Freeze until firm preferably overnight.
  5. Dip the bottom of the moulds in hot water for a few seconds to remove the pops from the moulds. Enjoy!
