Blueberry Swirl Coconut Popsicles (Dairyfree)
- 1 3/4 cups blueberries fresh or frozen, defrosted
- 4 tablespoons granulated sugar
- 3 tablespoons lemon juice freshly squizzed
- 1/2 pound cream yogurt
- 3 1/3 tablespoons full fat coconut milk
- 1 1/3 tablespoons powdered sugar
- 11/16 ounce pina colada mix or 1 tbsp coconut extract
- Combine blueberries, granulated sugar and lemon juice in a blender and puree until smooth. Taste for sweetness and add more sugar if you like. Transfer mixture in a measuring jug and set aside
- In a bowl, whisk together the soy cream, the coconut milk, powedered sugar and pina colada mix.
- Fill the popsicles moulds, alternating layers of coconut cream and blueberry puree
- Freeze 1h then insert the sticks. Freeze until firm preferably overnight.
- Dip the bottom of the moulds in hot water for a few seconds to remove the pops from the moulds. Enjoy!
