Eggplants Stuffed With Ground Meat And Wild Mushrooms

  1. Preheat the oven to 180C.
  2. Cut the eggplants lengthwise in halves and place them in the oven for 30 minutes.
  3. In a saucepan, saute the onion, leek, and peppers. Season with salt and pepper.
  4. Add the wild mushrooms and cook for another 3 minutes.
  5. Add the ground meat; a few moments before it is done, add the tomato sauce. It will finish cooking in the oven.
  6. Remove the eggplants from the oven and hollow them out using a spoon.
  7. Carefully stuff the eggplant halves with the meat and mushrooms. Add grated cheese on top and place in the oven for a few minutes until the cheese melts.
