Eggplants Stuffed With Ground Meat And Wild Mushrooms
- 2 eggplants small
- 1 onion
- 1 leek finely chopped
- 1 green bell pepper finely chopped
- 1 red bell pepper finely chopped
- salt
- pepper
- 4 wild mushrooms large
- 2/3 pound meat ground
- 5 tablespoons tomato sauce
- cheese grated
- Preheat the oven to 180C.
- Cut the eggplants lengthwise in halves and place them in the oven for 30 minutes.
- In a saucepan, saute the onion, leek, and peppers. Season with salt and pepper.
- Add the wild mushrooms and cook for another 3 minutes.
- Add the ground meat; a few moments before it is done, add the tomato sauce. It will finish cooking in the oven.
- Remove the eggplants from the oven and hollow them out using a spoon.
- Carefully stuff the eggplant halves with the meat and mushrooms. Add grated cheese on top and place in the oven for a few minutes until the cheese melts.
