Pork With Warm Apple-Carrot Slaw
- 4 boneless pork chops
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 1/2 tablespoons promise buttery spread
- 2 granny smith apple
- 1 sweet onion
- 1 1/2 cups carrots
- 2 tablespoons firmly packed dark brown sugar
- 1 tablespoon balsamic vinegar white, or apple cider vinegar
- 1/4 cup dried cranberries
- In 12-inch nonstick skillet, melt 1-1/2 tablespoons Promise(R) Buttery Spread over medium-high heat and cook chops, turning once, 6 minutes or until done. Remove chops and keep warm.
- In same skillet, melt remaining 1/2 tablespoon Spread and cook apples and onion, stirring occasionally, 4 minutes. Add carrots and cook 2 minutes. Stir in sugar and vinegar. Reduce heat and simmer 2 minutes or until vegetables are tender. Stir in cranberries and any juice from chops. Serve chops over slaw.
