Skillet Cookies

  1. Beat eggs.
  2. Add sugar and salt.
  3. Melt butter in skillet. Pour in egg mixture.
  4. (Stir once or twice around pan so egg does not start cooking.)
  5. Add dates and stir until mixture thickens and turns brown (3 to 5 minutes) after mixture boils.
  6. Add vanilla. Remove from heat; add cereal and nuts.
  7. Cool slightly.
  8. Make into small balls or into long rolls like refrigerator cookies.
  9. Roll in coconut, nuts or powdered sugar.
  10. (I like to use powdered sugar.) Put in refrigerator to harden.
  11. These keep indefinitely in long rolls and can be sliced as needed.
