Broccoli Cheddar Stuffed Chicken Breast

  1. Blanch the broccoli florets. Drain the excess water.
  2. Slice the cheddar.
  3. Make a small incision into the chicken breasts and manipulate the knife to create a pocket within the chicken breast, while keep a majority of the edges uncut.
  4. Take 4 oz. broccoli and 2 oz. sliced cheddar and stuff it into the pocket of the chicken breast.
  5. Heat a pan to medium-high and sear the chicken breast on both sides (roughly 4 minutes per side)
  6. Place the chicken breasts on a baking sheet and cook in the oven at 375 degrees for 15 minutes or until the chicken is completely cooked.
  7. Remove from the oven and allow to set for 3 minutes before serving
