Broccoli Cheddar Stuffed Chicken Breast
- 2 boneless skinless chicken breasts
- 8 ounces broccoli florets fresh
- 4 ounces cheddar medium sharp
- 2 teaspoons garlic powder
- salt
- pepper
- Blanch the broccoli florets. Drain the excess water.
- Slice the cheddar.
- Make a small incision into the chicken breasts and manipulate the knife to create a pocket within the chicken breast, while keep a majority of the edges uncut.
- Take 4 oz. broccoli and 2 oz. sliced cheddar and stuff it into the pocket of the chicken breast.
- Heat a pan to medium-high and sear the chicken breast on both sides (roughly 4 minutes per side)
- Place the chicken breasts on a baking sheet and cook in the oven at 375 degrees for 15 minutes or until the chicken is completely cooked.
- Remove from the oven and allow to set for 3 minutes before serving
