Pork Milanese Di Culatello With Salsa Verde
- 3 anchovies
- 1/2 cup capers rinsed
- 1 lemon zest
- 1/4 cup lemon juice
- 1 bunch parsley
- fennel fronds as needed
- 1 shallots minced
- 1 clove garlic minced
- 1 1/2 cups olive oil
- 12 boneless center cut pork chops culatello ham, pounded 1/4-inch thick
- 3 quarts fresh breadcrumbs
- 1/2 bunch parsley chopped
- 1/2 bunch basil chopped
- 1/2 bunch mint chopped
- 3 cups all-purpose flour 3 cups a.p.
- 5 eggs beaten
- 1. Pound out chops to 1/4-inch thickness
- 2. Combine breadcrumbs with fresh herbs
- 3. Bread the pork using standard breading procedure
- 4. Pan fry chops over medium heat in olive oil
- 5. Serve with salsa verde
- 1. Combine all ingredients, blend, and season to taste
