Sirloin Steak With Cafe De Paris Butter
- 1 cup butter chopped, at room temperature
- 1/2 cup fresh herbs mixed, finely chopped
- 2 tablespoons lemon juice
- 1 large egg yolk
- 1 tablespoon capers finely chopped
- 1 shallot finely chopped
- 2 teaspoons worcestershire sauce
- 1 anchovy finely chopped
- 1 teaspoon curry powder
- 1 clove garlic crushed
- 4 sirloin steaks 7-8 oz each
- 1 tablespoon olive oil
- mashed potatoes
- green beans
- For the cafe de paris butter, combine all ingredients except steaks and oil in a medium bowl. Beat with an electric mixer, until pale and combined. Spoon onto a piece of plastic wrap, forming a log shape. Roll up and twist ends. Refrigerate until firm.
- Bring steaks to room temperature before cooking. Brush with oil and season to taste.
- Preheat grill pan or large skillet on high heat. Cook steaks 4 mins each side for medium-rare, or cook to desired doneness.
- Place steaks on serving platter. Top each steak with a slice of the butter. Let stand, loosely covered with foil, 5 mins. Serve with mash potatoes and beans.
