Texas Barbecue Sauce

  1. Melt
  2. butter in a
  3. heavy
  4. pot
  5. over
  6. medium
  7. heat.
  8. Add onion, garlic, celery and pepper.
  9. Cook until limp and tender, but not brown.
  10. Add
  11. all
  12. remaining ingredients and bring to a boil. Reduce heat and
  13. cover;
  14. simmer
  15. for
  16. 1
  17. hour, stirring occasionally.
  18. Remove from heat and allow to cool.
  19. Remove bay leaves, then blend in blender, food processor or force through a sieve.
  20. Keep refrigerated.
