Walnut Turtles

  1. Cover baking sheet with waxed paper.
  2. Cut walnut halves into large pieces and arrange into 28 to 30 clusters, spaced 1-inch apart.
  3. Put caramels and butter in top of double boiler.
  4. Set over hot water until caramels are melted, stirring occasionally.
  5. Remove from heat; add vanilla and stir until butter, vanilla and caramels are thoroughly mixed.
  6. Drop by teaspoons onto walnut clusters, making sure caramel touches all walnut pieces.
  7. Cool.
  8. Melt chocolate with shortening over hot (not boiling) water.
  9. Spread over caramel and nut clusters and allow to set before removing from waxed paper.
  10. Store in tight container in cool place.
  11. Makes 28 to 30 turtles.
