Walnut Turtles
- 2 c. walnut halves
- 36 caramel candies, unwrapped
- 3 Tbsp. butter or oleo
- 1/2 tsp. vanilla extract
- 2/3 c. semi-sweet or milk chocolate pieces
- 1 1/2 tsp. shortening
- Cover baking sheet with waxed paper.
- Cut walnut halves into large pieces and arrange into 28 to 30 clusters, spaced 1-inch apart.
- Put caramels and butter in top of double boiler.
- Set over hot water until caramels are melted, stirring occasionally.
- Remove from heat; add vanilla and stir until butter, vanilla and caramels are thoroughly mixed.
- Drop by teaspoons onto walnut clusters, making sure caramel touches all walnut pieces.
- Cool.
- Melt chocolate with shortening over hot (not boiling) water.
- Spread over caramel and nut clusters and allow to set before removing from waxed paper.
- Store in tight container in cool place.
- Makes 28 to 30 turtles.
