Sweet Italian Taralli Cookies (Gluten Free & Paleo)
- 4 15/16 ounces cassava flour
- 6 3/8 tablespoons flour Tigernut
- 5 5/8 tablespoons coconut flakes
- 2/3 tablespoon matcha powder
- 5 2/3 tablespoons coconut milk
- 5 7/8 tablespoons apple sauce
- 2 1/4 tablespoons coconut oil
- 2 teaspoons lemon juice
- 1/2 teaspoon vanilla extract
- 1 7/16 teaspoons honey optional
- stevia to taste
- Preheat the oven to 350 F.
- Combine all ingredients in a bowl and mix well.
- Knead with your hands for a few minutes then take off pieces of dough (the size of a tablespoon will suffice) and give them a ring shape with your hands.
- When you formed all your taralli, place them on a baking pan lined with parchment paper and bake them for 25 minutes.
