Szechwan Spareribs

  1. Trim and discard excess fat from ribs; cut between bones into individual pieces.
  2. Heat 2 tablespoons of the oil in a wide frying pan over high heat.
  3. Add ribs and cook, stirring often, until browned (about 4 minutes).
  4. Remove from pan from heat and let cool briefly.
  5. Add water and soy and return pan to low heat; cover and simmer until ribs are fork-tender (about 30 minutes).
  6. Meanwhile, prepare cooking sauce and set aside.
