Szechwan Spareribs
- about 1 1/2 lb. pork spareribs, cut Chinese style into 1 1/2-inch lengths
- 3 Tbsp. salad oil
- 1/3 c. water
- 1 Tbsp. soy sauce
- Cooking Sauce (recipe follows)
- 2 cloves garlic, minced or pressed
- 1 tsp. minced fresh ginger
- 1/4 to 1/2 tsp. crushed red pepper
- 1 green pepper, seeded and cut into 1-inch sq.
- Trim and discard excess fat from ribs; cut between bones into individual pieces.
- Heat 2 tablespoons of the oil in a wide frying pan over high heat.
- Add ribs and cook, stirring often, until browned (about 4 minutes).
- Remove from pan from heat and let cool briefly.
- Add water and soy and return pan to low heat; cover and simmer until ribs are fork-tender (about 30 minutes).
- Meanwhile, prepare cooking sauce and set aside.
