Minestrone Soup
- 1 lb. stew meat and stock
- 4 carrots
- 4 stalks celery
- 1/2 head cabbage
- 1 (16 oz.) can chopped tomatoes
- 1 small can tomato paste
- 1 can garbanzos, undrained
- 1 can pork and beans
- 1/2 c. salad macaroni
- Parmesan cheese
- parsley
- oregano
- 2 Tbsp. salt
- pepper
- 1 pkg. frozen spinach
- 1 onion
- Cut stew meat up and brown. Cover with stock. Add chopped carrots, celery and onion.
- Cook until almost done and add cabbage.
- Add the undrained tomatoes, tomato paste, garbanzos, pork and beans and macaroni. Add Parmesan cheese, parsley, oregano to taste, salt, pepper and frozen spinach, thawed.
- Makes a lot of soup.
