Banana And Honey Bread Pudding

  1. Preheat the oven to 350u0b0F. Lightly grease a 2-quart baking dish.
  2. Place milks, honey, cinnamon stick and vanilla bean and seeds in a medium saucepan on medium heat. Stir for 5-7 mins, until mixture is hot. Strain into a large bowl. Cool slightly.
  3. Whisk eggs in a large bowl, until frothy. Gradually whisk in the warm milk mixture.
  4. Place alternate layers of bread and banana in the prepared dish, slightly overlapping the pieces. Pour the egg mixture over the top. Sprinkle with sugar.
  5. Place baking dish in a large roasting pan. Add enough boiling water to roasting pan to come halfway up the sides of the baking dish.
  6. Bake for 45-50 mins, until custard is set (a knife inserted into the center will come out clean). Remove baking dish from roasting pan. Cool for 5 mins. Dust with cinnamon. Serve with low fat yogurt mixed with honey.
