Gizzards In Tomato Sauce

  1. Place onion, garlic, sausage, and bacon in the pressure cooker, and sprinkle with a little olive oil.
  2. Fry on a low heat, when mixture starts to brown, add the parsley and chopped coriander.
  3. Add the tomato pieces and tomato paste, and let cook for a bit.
  4. Mix in the defrosted gizzards. Add lemon juice, glass of white wine, a little water, chili, and sugar (to prevent the sauce from becoming too acid).
  5. Season with a little salt, and cover the pan. After it starts to boil simmer for 12 to 15 minutes.
  6. Turn off heat, wait for the pot to lose pressure, and serve warm sprinkled with fresh parsley.
