Yellow Summer Squash With Cheese

  1. Preheat broiler to high.
  2. Rinse the squash and pat dry.
  3. Trim off the ends of the squash.
  4. Cut the squash into thin rounds. Heat the oil in a large heavy skillet and add the squash, shaking the skillet to distribute the squash evenly.
  5. Add the salt and pepper to taste and cook over high heat 4 minutes.
  6. Sprinkle with oregano and toss to blend well.
  7. Remove the garlic and discard. Transfer the squash to a flameproof serving dish, piling it up and smoothing the surface to make it flat.
  8. Sprinkle with the cheese. Place the dish under the broiler and cook briefly until the cheese is lightly browned.
