Pork Chops With Braised Vegetables And Apple Salsa
- 2 tablespoons olive oil
- 14 ounces boneless pork chops
- 1 tablespoon ground black pepper
- 1 ounce red cabbage shredded
- 1/3 cup chicken stock or white wine
- 1 tablespoon lemon juice
- 1 bunch Chinese broccoli trimmed, halved
- salsa Spicy Apple
- 1 green apple finely chopped
- 2 tablespoons lemon juice
- 1 red chili long, deseeded, finely chopped
- In a large frying pan, heat 1 tbsp oil over high heat. Sprinkle pork with pepper. Cook for 3 mins then flip over and cook for another 2 mins. Set aside, covered, to rest.
- Add remaining oil to pan. Saute cabbage for 1 min over medium heat. Add stock and lemon juice. Simmer for 3-4 mins, stirring, until cabbage is tender. Add broccoli and cook, covered, for another 2 mins, until broccoli is just tender. Season.
- Meanwhile, to make the apple salsa, mix all ingredients together in a bowl. Season.
- Serve pork on a bed of vegetables. Top with apple salsa.
