Deluxe Salad: Asparagus, Carrot, Baby Broad Beans And Cheese

  1. First, water and mince the asparagus; peel and dice the carrots. Drain the broad beans.
  2. On one side, bring the asparagus to boil in a small pot with water and a pinch of salt. Boil for 5 minutes, just to cook them al dente. On the other side, boil the carrots too. You can boil them in the same pot, or microwave them in a recipient with a little layer of water and a cover, for 8-10 minutes (this method is perfect for "steam cooking" all kinds of veggies in a quick and easy way, for example, broccoli or cauliflower).
  3. Once our veggies are ready, just put all together! Sprinkle some grated light cheese to your choice and dress with a drizzle of olive oil (just avoid it to save some calories) and some balsamic vinegar. Mix well and serve. Easy, tasty and healthy!
