Irish Chicken & Dumpling Stew
- 4 cups water
- 2 cans cream of chicken soup
- 2 onions diced
- 2 stalks celery chopped
- 4 chicken breasts cut into bite sized pieces
- 4 carrots chopped
- 4 potatoes
- 1 can peas
- salt
- 3 cups baking mix like Bisquick
- 1 1/3 cups milk
- In a soup pot, combine water, soup, onions, celery and chicken. Salt and pepper. Cover and cook for 2 hours, on low heat.
- Add in carrots and potatoes and cook for another 30 minutes.
- Add in canned peas, cooking for 10 more minutes.
- While peas are cooking, prepare dumplings by combining milk and baking mix.
- Bring stew to a boil, and drop dumplings by the spoonful into the stew. Reduce to simmer. Cover and cook for 10 minutes. Remove lid and cook another 10 minutes.
