Grandma’S Pipian Sauce Chicken
- 4 Ancho chilies plus another one sliced and lightly fried
- water
- 1/2 cup almonds
- 2 1/8 cups milk
- 6 chicken pieces thigh and leg
- salt
- ground black pepper
- 3 1/8 tablespoons lard
- 1 11/16 cups chicken broth
- chicken bouillon powder
- 1/2 cup sesame seeds roasted
- Soak the chilies in hot water. Drain, seed, and devein.
- In a blender, grind the chilies, almonds, and milk.
- Season the chicken with salt and pepper.
- In a saucepan, add the lard and sear the chicken. Set aside.
- In the same saucepan, add the sauce and cook for 3 minutes. Add the chicken, chicken broth, and bouillon powder.
- Cook over low heat for 20 to 30 minutes.
- Serve the chicken covered with sauce. Sprinkle sesame seeds on top and garnish with lightly fried ancho chili rings.
