Chinese Casserole
- 1 1/2 to 2 lb. ground chuck
- 1 c. chopped celery
- 1/4 c. soy sauce
- 1 to 1 1/2 c. water
- 1/4 c. uncooked wild rice
- 1 medium onion, chopped
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1/2 c. uncooked white rice
- 1 can chow mein rice noodles
- cashew nuts (optional)
- mandarin orange slices (optional)
- Brown ground chuck and onion in a 400u0b0 oven for 20 minutes, stirring occasionally; drain well.
- Add celery, soy sauce, soup, water and rice; mix well.
- Bake, uncovered, in a 9 x 13-inch pan or small roasting pan for 1 to 1 1/2 hours at 325u0b0.
- Five minutes before removing casserole from oven, top with rice noodles (and, if desired, cashew nuts and mandarin orange slices).
