Classic Fried Rice

  1. Heat 2 tsp oil in large wok on high. Pour in egg and cook as an omelette. Remove, roll up and slice. Heat remaining oil in wok. Stir-fry ham, ginger and garlic for 1 min. Add vegetables. Stir-fry for 2 mins.
  2. Add rice, shrimp, soy sauce and wine. Stir-fry for 2-3 mins, until hot. Serve topped with omelette and scallion.
