Garlic Beef Stir-Fry With Green Beans
- 2 cloves garlic peeled and quartered
- 2 long green chilies coarsely chopped
- 2 Thai chilies small fresh red, coarsely chopped
- 1 tablespoon peanut oil
- 1 1/4 pounds lean ground beef
- 1/2 pound green beans chopped coarsely
- 1 red pepper medium, deseeded and thinly sliced
- 1/2 tablespoon hoisin sauce
- 18 ounces rice noodles fresh, soaked in warm water for 5 mins then drained
- 4 spring onions thickly sliced
- 2 tablespoons peanuts crushed
- Process garlic and chilies until finely chopped. Heat 1/2 oil in a large wok and stir-fry garlic-chili mixture until fragrant. Add ground beef and stir-fry until cooked through. Set aside. Wipe out wok then add remaining oil. Stir-fry beans and pepper until tender. Return beef to wok along with sauce, noodles and spring onion. Stir-fry until hot. Sprinkle with nuts and serve.
