Turmeric Sorbet
- 2 cups water filtered
- 1/4 cup fresh turmeric peeled and roughly diced
- 10 cardamon pods, seeds removed
- 2 sticks cinnamon
- 1 tablespoon rose buds
- 3 teaspoons raw honey
- 2 teaspoons fresh lemon juice
- In a medium saucepan, bring water to a boil.
- Add the turmeric, cover, allow to simmer for about 10 minutes.
- Add the cardamon seeds and cinnamon sticks.
- Simmer for a further 5-10 minutes or until flavors are infused into the water. Remove the cinnamon when necessary, it can become overpowering.
- Remove from heat.
- Add the rosebuds, cover and allow to infuse 3-5 minutes.
- Make sure there is only a hint of rose and the mixture does not become bitter.
- Strain the liquid into a bowl.
- Add honey in increments until desired sweetness is reached.
- Add lemon juice until acidity is balanced.
- The quantities of honey and lemon will vary depending on the flavors and intensity of the liquid.
- Allow mixture to cool, place in freezer or fridge to speed up process. Transfer mixture to ice cream machine and process.
- Store in freezer until ready to eat.
