Apricot Pear Tart

  1. Mix graham cracker crumbs, sugar and butter in a small bowl. Press crumb mixture onto bottom of 9-inch spring-form pan. Dissolve Jell-O in boiling water, measure 3/4 cup Jell-O; set aside.
  2. Chill remaining Jell-O until slightly thickened.
  3. Fold in whipped topping and ginger.
  4. Spoon over crust.
  5. Chill measured gelatin until slightly thickened.
  6. Slice pears lengthwise, cutting almost through stem ends.
  7. Arrange on whipped topping mixture, fanning each pear slightly.
  8. Place mint leaf and cinnamon stick at stem of each.
  9. Carefully spoon remaining Jell-O over pears. Chill 3 hours.
  10. Run hot knife around edges of pan before removing.
