Lemon Chicken With Gremolata Gnocchi
- 12 chicken drumsticks skin-on
- 5 tablespoons olive oil
- 2 lemons juice of 1/2, grated zest of 1, peel of 1 shaved into fine strips
- smoked paprika Sweet, to taste
- 3 cloves garlic peeled and finely chopped
- 1 tomato deseeded and diced
- 4 tablespoons fresh flat leaf parsley little reserved for garnish, remainder cut into strips
- 5 cups fresh gnocchi
- 2 1/8 tablespoons butter
- lemon wedges for garnish
- Preheat the oven to 400u0b0F. Place the chicken in a roasting pan. Season the oil with salt and black pepper and brush over the chicken. Roast for 30 mins.
- In a bowl, mix the lemon zest and juice and season with paprika to taste. Brush over the chicken and roast for 10 mins.
- For the gremolata, mix the garlic, tomato, parsley and strips of lemon peel. Cook the gnocchi in boiling salted water according to the pack instructions. Drain and refresh with cold water.
- Melt the butter in a frying pan. Add the gnocchi and two-thirds of the gremolata and fry for 2 mins. Season with black pepper and spoon on to a serving plate. Top with the chicken, sprinkle with the remaining gremolata and garnish with parsley and lemon wedges.
