Three Cheese Manicotti
- 1 1/2 c. water
- 1 (8 oz.) can tomato sauce (1 c.)
- 1 pkg. spaghetti sauce mix
- 2 (8 oz.) c. shredded Mozzarella cheese
- 1 (8 oz.) c. Ricotta or creamed-style cottage cheese
- 1/2 c. grated Parmesan cheese
- 2 eggs, beaten
- 1/4 c. snipped parsley
- 8 manicotti shells, cooked and drained
- 1/2 tsp. salt
- 1/8 tsp. pepper
- In small saucepan, blend water, tomato sauce and spaghetti sauce mix; simmer uncovered for 10 to 12 minutes.
- Meanwhile, combine 1 cup Mozzarella, Ricotta and Parmesan cheese.
- Add eggs, parsley, salt and pepper.
- Mix lightly; stuff shells with cheese mixture using about 1/2 cup of mixture for each.
- Pour half of spaghetti sauce into 2-quart or 11 3/4 x 7 1/2 x 1 3/4-inch baking dish; arrange stuffed manicotti in dish.
- Pour remaining sauce over top.
- Sprinkle remaining 1 cup cheese and bake at 350u0b0 for 25 to 30 minutes.
