Multi-Seed Danish Buns

  1. Put the flax seeds and sesame seeds in a bowl, add hot water and let soak for about 30 minutes.
  2. Dissolve the yeast in the buttermilk.
  3. In the food processor bowl, add yeast and milk mixture, brown sugar, salt, oatmeal, and wheat flour.
  4. Knead for about 5 minutes on medium speed.
  5. Let rise, covered with a damp cloth, for 1 hour in a warm place.
  6. Put the dough on a floured surface, knead, and divide into 12 balls.
  7. Alternatively, roll out the dough slightly thick, and cut 12 rounds or other shapes with a cookie cutter.
  8. Let rise for about 20 minutes.
  9. Preheat oven to 400F.
  10. Mix the egg yolk with a little milk.
  11. Brush rolls with the mixture and coat with the seed mixture.
  12. Bake for about 15 to 20 minutes depending on the size of the buns.
