Healthy Pumpkin-Apple Cakes
- 1 1/2 cups pumpkin puree
- 1 cup unsweetened applesauce
- 1/2 cup buttermilk
- 2 large eggs
- 2 egg whites
- 1/3 cup black strap molasses
- 2 1/2 cups spelt flour
- 1/2 cup arrowroot powder
- 1 tablespoon baking soda
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon allspice
- 1/4 teaspoon cloves
- 1/4 teaspoon cardamom
- 1 teaspoon ground ginger
- 2 apples diced
- Preheat your oven to 375F and coat your individual/mini Bundt pans or a 9" Bundt pan with coconut oil.
