Crisp & Light Waffles
- 2 cups cake flour
- 2 tablespoons sugar, divided
- 1/2 teaspoon coarse kosher salt
- 1 1/2 cups milk
- 1/2 cup vegetable oil
- 1/2 teaspoon pure vanilla extract
- 2 eggs, separated
- Preheat waffle iron according to manufacturer's instructions. Place a baking sheet in oven and preheat oven to 200F or warm.
- Whisk cake flour, 1 tablespoon sugar and salt together in a medium bowl. Whisk in milk, vegetable oil, vanilla and egg yolks.
- Place egg whites in a separate medium bowl and whip to soft peaks. Add 1 tablespoon sugar to whites and continue whipping to stiff peaks.nold whites into batter until no lumps or streaks remain.
- Spray waffle iron with nonstick spray. Add batter to waffle iron, according to manufacturer's directions, and cook until waffles are golden brown and crisp. Remove waffles from iron and place on baking sheet in oven. Repeat until all batter is cooked.
