Pork And Beans In Spicy Tomato Sauce
- 3 tablespoons olive oil
- 12 slices sourdough bread
- 1 1/8 pounds smoked pork chop cut into cubes
- 1 onion medium, finely diced
- 1 red chilli finely diced
- 1 clove garlic finely chopped
- 1 3/4 cups chopped tomatoes tins
- 6 3/4 tablespoons vegetable stock
- 1 3/4 cups white beans tin of, drained
- 1 bunch thyme leaves stripped
- Heat 2 tbsp oil in a large saucepan and toast the bread on both sides until golden brown. Season then drain on paper towels. Break into pieces.
- Add 1 tbsp oil to the pan and sear the meat for 4-5 mins until browned on all sides. Add the onion, chili and garlic and saute for 2-3 mins. Add the tomatoes and stock, cover and simmer for 15 mins. Season. Add the beans and thyme and cook for another 5 mins. Serve with the toasted bread pieces.
